Makhana (Euryale ferox), also known as Fox Nuts or Lotus Seeds, are harvested from the prickly water lily plant in the freshwater wetlands of Bihar, India. The seeds are sun-dried, then roasted at high heat to produce light, airy, cloud-like pops.
